Slow Cooked Lamb Shanks

SLOW COOKED LAMB SHANKS

SERVES: 4

INGREDIENTS

4 grass fed lamb shanks

2 carrots, finely diced

3 celery stalks, finely diced

1 red onion, finely diced

3 garlic cloves, crushed

2 cups of broth or stock of choice (you can use 1 tbl of bone broth concentrate to 2 cups of water, I love Best of the Bone)

1 cup red wine

1 1/2 cups tomato passata

1 tbl dried rosemary

1 tbl whole coriander, crushed

METHOD

Place all ingredients into the base of a large slow cooker and mix until well combined and lamb shanks are submerged in the liquid. This step is important, otherwise they may dry out whilst cooking.

Switch on to low heat and cook for 8 hours.

Serve with mashed veggies and greens. I love doing a combination of mashed carrot and sweet potato.

Simply chop 2 carrots and 1 medium sweet potato and boil in a pot of water until tender.

Drain the liquid and then add a good dollop of grass fed butter and a crack of salt and mash.
