White Choc Cookies
WHITE CHOC COOKIES
MAKES: 10
INGREDIENTS
1 cup almond meal
1/2 cup buckwheat flour
1 heaped tsp cinnamon
Pinch sea salt
1 tsp baking powder
2 tbl honey or maple syrup
2 tbl melted ghee (or coconut oil)
1 heaped tbl almond butter
1 egg
50g white chocolate (or choc of choice), roughly chopped
METHOD
Preheat oven to 160°C and line a tray with baking paper.
Mix all dry ingredients together in a bowl and mix all wet ingredients together in a separate bowl. Leaving chocolate out.
Add wet to dry and mix until combined, then add in the chocolate.
Roll into 9 cookies, or 3 and softly press down.
Bake for 12-15 minutes, keeping an eye on them to make sure they don’t burn!
