Thai Pumpkin Soup

THAI PUMPKIN SOUP

SERVES: 4

HOW TO

Roast 1kg of pumpkin in plenty of olive oil & s + p under really tender.

Once finished roasting, in a large pot fry off 1 red onion and 4 cloves of garlic, add in 1 tablespoon red curry paste along with the baked pumpkin and stir until coated well.

Then add in 270ml Ayam coconut milk and 3 cups of vegetable stock.

Bring to the boil for 20 minutes to let the flavours really infuse.

Cool. Blend. Eat.
