Vege Packed Bolognese with Buckwheat Pasta

VEGE PACKED BOLOGNESE WITH BUCKWHEAT PASTA

GLUTEN FREE

SERVES: 4

INGREDIENTS

2 cloves garlic, crushed

1 brown onion

500g beef mince

1 carrot, grated

1 zucchini, grated

1/2 red capsicum, finely diced

1/2 cup frozen peas

1 cup basil, roughly chopped

1 tsp smoked paprika

500g passata or pasta sauce (I used Keep It Cleaner Garlic & Basil Pasta Sauce)

Parmesan cheese, to serve

1 cup cooked buckwheat pasta, to person, to serve (I used Orgran Buckwheat Pasta)

METHOD

Heat olive oil in large frypan.

Add garlic and onion and sauté for 5 minutes.

Add in the beef mince and brown, breaking the mince apart into small chunks.

Add in the carrot, zucchini, capsicum, peas, basil and smoked paprika and mix until combined well.

Add in a jar of passata or pasta sauce and simmer on a low heat for 15 minutes.

Cook your choice of pasta while the sauce is simmering.

To serve, dish up a portion of pasta into each bowl and top with 1 to 1 1/2 cups of mince mixture. Top with parmesan and enjoy!
