PALEO CACAO PROTEIN BROWNIES

MAKES: 8 pieces

INGREDIENTS

3/4 cup almond meal

1/4 cup cassava flour (can sub for buckwheat flour)

1/4 cup Botanika Blends Protein Powder (I used Custard Filled Cinnamon Donut flavour)

1/3 cup cacao powder

1 tsp baking powder

1 tsp cinnamon

A good pinch of salt

1/4 cup maple syrup or lakanta (for completely sugar free)

6 mejdool dates, chopped

1/3 cup coconut oil, melted

3 eggs, lightly whisked

1 tsp vanilla

50g dark chocolate

METHOD

Preheat oven to 160°C and line a loaf tin with baking paper.

In a large bowl add the almond meal, cassava flour, protein powder, cacao, baking powder, cinnamon and salt. Mix to combine.

Add in the maple syrup, melted coconut oil, eggs and vanilla. Mix to combine (you may need to add a touch of water to achieve a thick cake batter consistency) then stir in the dates.

Scoop mixture into the tin and press shards of chocolate on top of the mixture.

Bake for 20 minutes until just cooked through. Remove from the oven and allow to cool before removing from the pan and slicing.
