Vegan Muesli Cookies
MAKES: 9
INGREDIENTS
1 1/2 cups rolled oats
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup dried apricots
1/4 cup coconut oil
1/4 cup coconut sugar
2 tbl maple
2 tbl tahini
1/2 tsp bi carb
Salt
1/4 cup cranberries
METHOD
Blend together the oats, sunflower seeds, pumpkin seeds and apricots until fine, a few chunks is still ok.
I did this on speed 7 in my TM. Then add in the remaining ingredients except for the cranberries.
The mixture should come together, use your hands to see if it forms a ball.
If it doesn’t just add a splash of water and re-blend. Add in the cranberries and shape into 7-8 large cookies. Cook in the oven 180C for about 20-25 minutes or until golden. Allow them to cool on the tray then store in an airtight container.
