Healing Congee

HEALING CONGEE

SERVES: 4-6

INGREDIENTS

2 tbl ghee or olive oil

1 small brown onion, grated

1 medium carrot, grated

160g shitake mushrooms, finely chopped

2 tbl grated ginger

6 garlic cloves, crushed

1 cup white rinsed

7-8 cups of bone broth (or vegetable stock if vegan/vegetarian)

½ tbl miso paste

 

To serve:

3 spring onions, finely sliced

Drizzle of sesame oil

METHOD

Please ensure you soak the rice overnight in water (for about 12 hours) and rinse before using, this helps the cooking process.

In a large saucepan, add in the ghee and melt, then add in the onion, carrot and mushrooms until they are softened. Next, add in the ginger and garlic and saute for 5 minutes.

Add in the rice to the vegetable mixture along with the broth or stock. You will need to cook this for around 30 minutes, giving it a mix every few minutes.

When the rice is about 5 minutes from being finished, mix through the miso paste.

Top with the spring onion and a drizzle of sesame oil.
