San Choy Bao
SERVES: 4
INGREDIENTS
500g beef mince
2 tbl olive oil
1 red onion, diced
2 garlic cloves, crushed
1 red chilli, diced
2 carrots, grated
1 packet brown rice noodles (@nutritionistchoice I love)
1 lemon, zested & juiced
8 large lettuce leaves
8 spring onions, sliced on the diagonal
½ bunch coriander, roughly chopped
2 tbl sesame seeds
Sea salt & pepper, to taste
Sauce
2 tbl tamari
1 tbl oyster sauce
METHOD
In a hot pan or wok add olive oil, onion, garlic, chilli and mince and sauté for 4-5 minutes or until mince starting to brown.
Add carrot, brown rice noodles (prepared as per packet), San Choy Bao Sauce and cook for a further 5 minutes before folding through the lemon zest & juice.
To serve: spoon beef mixture into the lettuce leaves and top with spring onions, coriander and sesame seeds.
