Nan’s Date Loaf
I have so many recipes which have been passed down to me over the years. One of these is my Nan’s Date Loaf. It’s made with few ingredients, so cheap and very quick to make. Most importantly, the kids love it, especially when lathered with butter.
We love butter in our house. It adds the best, rich flavour, while also providing energy and fat-soluble vitamins (A, D, E, K2) and beneficial compounds like butyrate and Conjugated Linoleic Acid (CLA), which may support gut health, bone health, and immune function.
MAKES: 8 Slices
INGREDIENTS / METHOD
Soaked dates:
Soak 1 cup dried dates (chopped) in 1 tsp bi carb soda, 1 cup boiling water for about 20 minutes.
Cream (in a Thermomix or with beaters/mix master):
4 tbl butter, softened
1/2 cup sugar
1 egg
Then add in the date mixture to the butter/sugar, then add:
2 cups self raising flour
Salt
1 tsp mixed spice
COOK
Bake in a moderate 170C oven for about 40 minutes, until just cooked through, you don’t want to over cook it or it will be dry.
