Macaroni Chicken Bake
SERVES: 4-6
INGREDIENTS
250g macaroni pasta
500g chicken mince
1 tbl olive oil
1 onion, diced
1 zucchini
1 carrot
1 tbl @mingleseasoning Garlic & Herb Seasoning
2 tbl plain flour
1 cup milk
2 tbl tomato paste
1/2 cup cheese
Salt
To Top
1/2 cup breadcrumbs
1/2 cup cheese
METHOD
Boil pasta in salted water until cooked, set aside.
While the pasta is cooking, add a little olive oil and cook the chicken mince then set aside.
To the same pan, add a little more olive oil, then the onion, carrot, zucchini and Mingle seasoning and cook until softened.
Add in the flour and cook for a 1 minute, then add in the milk, stir, then remove from heat and add in the tomato paste.
Mix through the cooked chicken, pasta and cheese, add some salt and transfer to an oven safe dish.
Top with breadcrumbs and remaining 1/2 cup of cheese and bake in the oven for 25 minutes until browned and heated through.
P.S. For my breadcrumbs I simply toast two pieces of frozen bread and blitz in my thermi.
