Crispy Quinoa & Apple Salad

A beautifully refreshing salad that goes well with any protein of choice. I love to serve this with a grilled salmon fillet.

CRISPY QUINOA & APPLE SALAD

GLUTEN FREE I DAIRY FREE

Notes:

TIME: 35 minutes

SERVES: 4

INGREDIENTS

2 red apples, cut into matchsticks

4 large handfuls of spinach

12 cherry tomatoes, cut in half

1 block feta, crumbled

1 bunch coriander, chopped

1 lime, juiced

1 cup quinoa or rice of choice

Sea salt & pepper, to taste

Caramelised onion

2 small red onions, thinly sliced

2 tbl balsamic vinegar

1 tbl honey

Olive oil

METHOD

In a small pan, place the quinoa (or rice if using) and 2 cups of water. Bring to the boil, then reduce heat to a simmer, cover and let cook for 15 minutes or until quinoa is cooked through.

While the quinoa is cooking, in a large bowl place the apple, spinach, cherry tomatoes, feta and coriander. Add a dash of olive oil and the lime juice. Mix until well combined. Place bowl aside.

To caramelise the onion, in a medium sized frypan, drizzle a dash of olive oil and add the onion, vinegar and honey. Keep heat to a medium and stir frequently until the onion is softened and smells aromatic.

Once the quinoa is ready, put it aside to cool for 5 minutes. Place the quinoa into the large bowl with the other salad ingredients and season with salt to taste.

Serve a portion of salad onto each plate and add your desired protein of choice.
