Apple Crumble
APPLE CRUMBLE

INGREDIENTS
6 pink lady apples, cored and cut into 1cm cubes
1 tsp vanilla bean paste (optional)
2 tsp ground cinnamon
½ tsp ground nutmeg
1 tbl raw honey or maple syrup
Crumble
¾ cup almond meal
¼ cup buckwheat flour or plain flour
½ tbl ground cinnamon
3 tbl ghee or butter
2/3 cup macadamia nuts, chopped
2 tbl shredded coconut
2 tbl pumpkin seeds
2 tbl raw honey or maple syrup
Pinch of salt
Natural Yoghurt or ice cream, to serve
METHOD
Preheat oven to 180°C and arrange a large crumble dish.
In a large saucepan, add the apple, vanilla bean paste, cinnamon, nutmeg and raw honey and mix to combine. Add in 2 tbl of water and bring to a simmer for 15-20 minutes until the apple is tender, but not mushy as it will continue to cook in the oven.
To make the crumble, mix together the almond meal, flour, cinnamon and ghee/butter until the mixture resemble fine breadcrumbs. Add the macadamias, coconut, pumpkin seeds, honey, salt and mix.
In the crumble dish, add the apple mixture, then spread the crumble mixture over the top. Bake for 10-15 minutes until the crumble is golden.
Serve with a big dollop of natural yoghurt or ice cream.
