Green Curry Fried Rice

This is such a versatile recipe, you can use any grain, any protein, keep keep the spices.

Get resourceful and use up any leftover veg you have in your pantry.

GREEN CURRY FRIED RICE

GLUTEN FREE I DAIRY FREE I HIGH PROTEIN

Notes:

COOK TIME: 30 minutes

SERVINGS: 4

INGREDIENTS

4 eggs, whisked

2 cloves garlic, crushed

1 red onion, finely diced

2 heaped tsp green curry paste

4 button mushrooms, diced

2 handfuls green beans, topped and tailed

1 1/2 cups pre cooked brown rice

1/2 cup pre roasted, diced pumpkin

2 cups kale, chopped

4 grass fed organic sausages (cooked and cut into little pieces)

1 tbl tamari

1/2 lemon, to serve

Tahini, to serve

Chilli, sliced, to serve

Olive oil

METHOD

Add a little olive oil to the pan and scramble eggs. Remove from the pan and set aside.

Add in a little more olive oil and sauté the crushed garlic and onion in the curry paste.

Add in the mushrooms and green beans, cook for 5 minutes until softened then add in the rice, pumpkin and kale and cook for an additional 5 minutes.

Add back in the eggs and sausages and drizzle a little tamari over the top. Mix together and heat through.

Turn off the heat and serve into bowls. Squeeze over the lemon juice, drizzle with tahini and garnish with chilli.
