Notes: A lighter side to pizza don’t get me wrong, I love a traditional sourdough pizza base, but sometimes I feel like a serve of veg (or 6) with my pizza, no judgement here! Try this and be amazed, you could even make the mix into mini pizzas. YAY! #nutfree and #glutenfree for those who need it. Packed FULL of vitamin C from the Cauli. We topped ours with tomato paste, caramelised red onion, capsicum and olives, cherry tomatoes, sardines, extra parmesan, basil, caramelised balsamic vinegar and hot sauce
COOK TIME: 35 minutes
SERVINGS: 4, makes 1 base
INGREDIENTS (Base Only)
1 large head of cauli, processed into fine rice like grains
3 eggs, whisked
1/3 cup parmesan cheese, finely grated
Pinch salt & pepper
METHOD
Mix together in a bowl and spread mix onto a large tray. Cook in the oven at 180°C for 25-30 minutes until crispy, THEN add your toppings.
That’s the key to a crispy base.
