Cassava Flour Banana Bread

The ghee/butter in this recipe gives the bread a beautiful golden and robust flavour.

CASSAVA FLOUR BANANA BREAD

DAIRY FREE I GLUTEN FREE I REFINED SUGAR FREE

MAKES: 8 slices

INGREDIENTS

3 ripe bananas, mashed

1 egg

1/3 cup melted ghee or butter

3 tbl honey or maple

1 cup cassava flour (you can use buckwheat or plain flour)

1/2 cup almond meal

1 tsp cinnamon

1 tsp baking powder

METHOD

Preheat oven to 180°C and line a loaf tin with baking paper.

Mash bananas in a large bowl, then add in the egg and melted ghee & honey.

Add in the cassava flour, almond meal, cinnamon and baking powder.

Mix to combine well. Scoop mixture into loaf tin and bake for approx 30-35 mins.

Slice and serve with nut butter.
