Cashew Butter Collagen Cookies

CASHEW BUTTER COLLAGEN COOKIES

SERVES: MAKES 9 COOKIES

INGREDIENTS

1 cup almond meal

2 tbl tapioca flour

3 tbl collagen 

1/2 cup cashew butter

1/4 cup maple syrup 

1 egg

1 tsp cinnamon

1 tsp maca powder

1/2 tsp baking powder

Pinch salt

METHOD

Preheat oven to 180°C and line a baking tray with baking paper.

Add wet ingredients together first, then mix in dry.

The mixture will be sticky, so use a ice cream scoop, or wet your hands slightly to transfer the mixture onto the tray. It will make 9 cookies.

Wet your hands again and press down lightly on the cookies.

Cook for 15 minutes and allow to cool on the tray.
