BBQ Miso Tahini Skewers
BBQ MISO TAHINI SKEWERS
SERVES: 4
INGREDIENTS
500g chicken thigh or breast, cut into cubes (can use tofu or beef)
1 red onion, cut into quarters for easy skewing
2 zucchini, sliced
6 bamboo skewers
Miso Tahini Dressing
2 tbl toasted sesame oil
Juice of 1 lemon or 1 lime
1 tbl tamari or soy sauce
1 1/2 tbl maple syrup
1 tbl brown miso paste
1 tbl tahini
Dash of water to thin to a drizzle consistency
To serve:
Brown rice
Broccolini
METHOD
Prepare the skewers by threading equal amounts of chicken, red onion and zucchini onto the skewers.
Make the Miso Tahini Dressing by coming all ingredients in a bowl.
Heat a BBQ grill plate on high and cook the skewers until the chicken is fully cooked through.
To serve, lay the skewers on a bed on brown rice and drizzle over the Miso Tahini Dressing.
I like to serve with a side of broccolini to get in some extra greens.
