Apple, Date & Cinnamon Loaf
APPLE, DATE & CINNAMON LOAF
SERVES: MAKES 12 SLICES
INGREDIENTS
3 cups of grated apple (3 medium pink lady apples)
6 medjool dates, pits removed
3 eggs, whisked
1/4 cup olive oil or butter
1/2 tbl cinnamon
1 tsp vanilla
1 cup almond meal
1 cup gluten free plain flour
2 tsp baking power
Pinch sea salt
METHOD
Preheat an oven to 180°C and line a loaf tin with baking paper.
Soak the dates in 1/4 cup boiling water for 5 mins, then mash with a fork.
Combine the apple, soaked dates, eggs, olive oil, cinnamon and vanilla into a bowl and mix well.
Add in the almond meal, flour, baking powder and salt and mix until just combined.
Transfer the mixture into the loaf tin and garnish with pumpkin seeds, coconut or apple.
Cook for approx. 50 mins, until an inserted skewer comes out clean.
Serve with your choice of nut or seed spread for extra goodness.
