SLOW COOKED BBQ FLAVOURED BEEF BRISKET

SERVES: 4

INGREDIENTS

Beef & Spice Mix:

1.2kg beef brisket

3 tbl smoked paprika

1/2 tbl chili flakes

1 tsp ground cumin

1 tsp salt

Good crack of pepper

BBQ Sauce Mix:

1/2 cup BBQ sauce

1 tbl Worcestershire sauce

1/4 cup water

1 tbl hot sauce (make sure it’s spicyyyy) Melbourne Hot Sauce is our fave brand to use

METHOD

Get your slow cooker out.

In a large bowl, mix spices together then add in the cut of meat, press the spices evenly over the meat to coat.

In a small bowl, mix together the BBQ Sauce Mix and then pour this at the base of the slow cooker.

Lay the seasoned meat on top of the sauce, put the lid on and cook on slow for 7-8 hours until falling apart. At the six hour mark, you can baste the beef with some of the juices (if you’re home to do so).

After cooked, remove meat from the slow cooker, shred with two forks and spoon over the BBQ Sauce Mix. You could also thicken the sauce with some cassava flour.

To sweeten up your beef, mix some BBQ sauce from the bottle through the meat. We didn’t do this as the flavours were enough for us.

Serve with a tray of roasted veg, in wraps, on burger buns or with coleslaw.
