Healthy Fried Rice

HEALTHY FRIED RICE

GLUTEN FREE, DAIRY FREE, SOY FREE

SERVES: 4

INGREDIENTS

500g chicken breasts, cut into cubes

1 tbl toasted sesame oil

1 brown onion, finely chopped

2 cloves garlic, crushed

2 small carrots, grated

1 tbl freshly grated ginger

3/4 cup frozen peas

1 large flat mushroom, finely chopped

3 eggs, whisked together in a bowl

1 cup cooked brown rice (you can use any rice you like)

2 tbl tamari (for soy free, otherwise you’re fine to use soy sauce)

1 large handful coriander, chopped

1 tbl, per person, to serve Cashew Parmesan (optional)

Olive oil

Sea salt & pepper

METHOD

Heat olive oil in a large frypan.

Add chicken pieces and cook for 10 minutes until the chicken is fully cooked through, then remove from the pan and set aside.

Heat the toasted sesame oil in the pan, then add in the onion, garlic, carrots, ginger, frozen peas and mushroom and cook for 5 or so minutes until warmed.

Push the vegie mixture to one side of the pan and add the eggs to the pan, scrambling until cooked, then mix the eggs through the veg.

Add the cooked rice to the pan and mix again, then add back in the chicken.

Drizzle with tamari and mix throughly, keep cooking for about 5 minutes, until the chicken has warmed through again.

Taste a little portion of the mixture to ensure it is seasoned to your liking,, you can always add a touch more tamari, sea salt and pepper if you wish.

Serve into bowls and top with some chopped coriander and some Cashew Parmesan *optional.
