Pumpkin Snacking Loaf
PUMPKIN SNACKING LOAF
MAKES: 8 slices
INGREDIENTS
300g raw pumpkin, steamed/boiled, then mashed with a fork
1 spotty banana, mashed
3 eggs
1/3 cup smooth or chunky natural peanut butter
2 tbl maple syrup
1 tbl chia seeds
1/2 cup cassava flour (you could use brown rice, buckwheat flour, or plain flour)
2 tbl coconut flour
1 tsp baking powder
1 heaped tsp cinnamon
Pinch sea salt
METHOD
Preheat oven to 180°C and line a loaf tin with baking paper.
In a bowl mix together the pumpkin, banana, eggs, peanut butter and maple syrup until smooth.
Add in the chia seeds, along with the flours, baking powder, cinnamon and sea salt. Fold until combined.
Pour into the prepared loaf tin and bake for approx 35 minutes until cooked through.
Serve with an additional lather of peanut butter and banana slices (that's how I like it!).
