Vegan Beetroot Lentil Burgers

VEGAN BEETROOT LENTIL BURGERS

MAKES: 9 burgers/patties

INGREDIENTS

1 small red onion, chopped

2 cloves garlic, sliced

Olive oil, for cooking onion and garlic

2 medium beetroots, grated

1 x 400 g can lentils, drained and rinsed

1/2 cup buckwheat flour

1/2 cup rolled oats

1/4 cup coconut flour 

1 heaped tbl tahini

1 tsp ground cumin

1 tsp ground coriander

1 tsp chilli flakes

Large handful coriander

Salt

METHOD

Add olive oil to a frying pan and cook the onion and garlic for 5 minutes until softened.

Put the cooked onion and garlic and remaining ingredients, except the oats and coconut flour, into a food processor and pulse until combined well.

Mix in the oats and coconut flour and fold through. The mixture should be dense but not sticky. If you need, add a touch more coconut flour. 

Use your hands to shape the patties into nine burgers then cook them over medium heat in a well-oiled frying pan for 5 minutes each side.

Serve with your choice of salad or on a bun.
