Sweet Potato Hummus

SWEET POTATO HUMMUS

SERVES: 6

INGREDIENTS

2 medium sweet potato, cut into cubes

1 x 400g chickpeas, drained & rinsed

6 tbl olive oil

2 tbl hulled tahini

1 heaped tsp of brown miso paste

Juice of 1 lemon

Pinch sea salt

2-4 tbl water

METHOD

Boil potatoes in a saucepan until tender, rinse and allow to cool slightly.

Place all remaining ingredients (except the water) into a food processor and process until combined. Gradually add in the water until a hummus consistency is achieved.

Serve with veggie sticks, crackers and even as a high protein salad topper.
