Slow Cooker Nutty Chicken

SLOW COOKER NUTTY CHICKEN

SERVES: SERVES 4

INGREDIENTS

1kg chicken thigh, cut into pieces

400 ml coconut cream

1/2 cup peanut butter (can you any nut butter!)

1/2 tsp garlic powder

1/2 tsp onion powder

2 tbl red curry paste

2 tsp fish sauce

1 tbl honey

8 cup mushrooms, quartered

2 large carrots, sliced on the diagonal

 

To Serve:

Cooked and cooled basmati rice, brown rice, zucchini noodles or cauliflower rice.

Steamed greens (broccolini, spinach, silver beet)

Coriander, chopped

Roasted peanuts

Lime wedges

Cashews, nut of choice

METHOD

Add the chicken, mushroom and carrot to the slow cooker.

In a bowl (or better yet a blender), mix together the coconut cream, peanut butter, garlic powder, curry paste, fish sauce and honey until combined really well.

Pour the mixture over the chicken and mix together.

Cook on low for 5 hours.

Serve with sides of your choice.
