Fluffy Cassava Pancakes

FLUFFY CASSAVA PANCAKES

MAKES: 6 pancakes

INGREDIENTS

2 eggs

1 tbl honey

1 tsp vanilla

½ tsp baking powder

1 tsp cinnamon

½ cup cassava flour (I used Three Spades brand)

2 tbl coconut flour

1/3 cup coconut milk

1/3 cup coconut yoghurt

Coconut oil (for cooking)

Blueberries or choc chips (optional)

METHOD

Whisk two eggs into a bowl, then add in the honey and vanilla.

Mix in the cassava flour, coconut flour, baking powder and cinnamon.

Add in the coconut milk and yoghurt and mix.

Heat some coconut oil in a frying pan and pour the batter into the pan. Cook for 2-3 minutes each side before flipping. If you’re using blueberries or chocolate, add these to the top of the pancakes before you flip them.

Serve with your choice of yoghurt and an extra drizzle of honey.
