Creamy Edamame Pad Thai
CREAMY EDAMAME PAD THAI
SERVES: 4
INGREDIENTS
2 large carrots, spiralized or grated
1 large zucchini, spiralized or grated
1 red capsicum, seeds removed and finely sliced
1 large cup red cabbage, thinly sliced
3 spring onions, thinly sliced
1 cup frozen edamame beans, cooked according to packet instructions
2 tbl hemp seeds (optional)
Sauce
1/4 cup Coles Wellness Road Nutty Spread or almond butter
1/4 cup hulled tahini
2 tbl water
3 tbl tamari
2 tbl maple syrup
2 tsp freshly grated ginger
Juice of 1/2 lime
Pinch of salt
METHOD
Prepare the vegetables and add the carrot, zucchini, capsicum, red cabbage and spring onions to a bowl. Toss to combine.
Combine all dressing ingredients in a small bowl and mix well.
Add dressing to the salad and toss through until combined well and top with edamame beans and optional hemp seeds for an extra boost of healthy fats and protein.
